Butterscotch Cupcakes with Vanilla Bean Frosting Recipe
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup butterscotch chips
- 1/2 cup whole milk
Instructions:
Preheat your oven to 350F 175C and line a cupcake pan with cupcake liners
In a bowl, whisk together the flour, baking powder, and salt
Set aside
In a separate mixing bowl, cream together the softened butter and brown sugar until light and fluffy
Add the eggs, one at a time, beating well after each addition
Stir in the vanilla extract
Gradually add the dry ingredients to the wet ingredients, alternating with the milk
Begin and end with the dry ingredients
Mix until just combined
Fold in the butterscotch chips into the cupcake batter
Divide the batter evenly among the cupcake liners, filling each about 2/3 full
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Allow the cupcakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely
While the cupcakes are cooling, prepare the Vanilla Bean Frosting
For the Vanilla Bean Frosting, you'll need: - 1/2 cup unsalted butter, softened - 2 cups powdered sugar - 2 tablespoons whole milk - 1 vanilla bean, split and seeds scraped or 1 teaspoon vanilla bean paste In a mixing bowl, beat the softened butter until creamy
Gradually add the powdered sugar, milk, and vanilla bean seeds or paste and beat until well combined and fluffy
Once the cupcakes are completely cooled, frost them with the Vanilla Bean Frosting
Sprinkle some Cajun sugar pie on top for a unique flavor twist
