Chocolate Cupcakes with Peanut Butter Cream Cheese Frosting
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
- 1/2 cup boiling water
- 1/2 cup creamy peanut butter
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/2 tsp vanilla extract
- Mini chocolate chips and chopped peanuts for garnish optional
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with cupcake liners
In a mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt
In another bowl, cream together the granulated sugar, brown sugar, and 1/2 cup of softened butter until light and fluffy
Add the eggs one at a time, beating well after each addition
Stir in the vanilla extract
Gradually add the dry ingredients mixture to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients
Mix until just combined, and then stir in the boiling water until the batter is smooth
The batter will be thin - don't worry, it's normal
Fill each cupcake liner about 2/3 full with batter
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Allow the cupcakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely
While the cupcakes are cooling, prepare the frosting
In a bowl, beat together the creamy peanut butter, softened cream cheese, and 1/4 cup of softened butter until smooth
Gradually add the powdered sugar and vanilla extract, beating until the frosting is creamy and well combined
Once the cupcakes are completely cool, frost them with the peanut butter cream cheese frosting
If desired, garnish with mini chocolate chips and chopped peanuts
