Bird-Shaped Sugar Cookies with Royal Icing
Ingredients:
- For Sugar Cookies:
- - 2 1/2 cups all-purpose flour
- - 1 cup unsalted butter, softened
- - 1 cup granulated sugar
- - 1 large egg
- - 1 teaspoon vanilla extract
- - 1/2 teaspoon salt
- For Royal Icing:
- - 3 cups confectioners' sugar
- - 2 large egg whites
- - 1 teaspoon lemon juice
- - Food coloring optional
- - Edible decorations optional
Instructions:
For Sugar Cookies: In a bowl, whisk together flour and salt
Set aside
In another bowl, cream together butter and granulated sugar until light and fluffy
Beat in the egg and vanilla extract until well combined
Gradually add the flour mixture to the wet ingredients, mixing until the dough comes together
Divide the dough in half, form two discs, wrap in plastic, and refrigerate for at least 1 hour
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
Roll out the chilled dough on a floured surface to about 1/4-inch thickness
Cut out bird, chick, or duckling shapes using cookie cutters
Place the shapes on the prepared baking sheet and bake for 10-12 minutes, or until the edges are lightly golden
Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely
For Royal Icing: In a bowl, whisk together confectioners' sugar, egg whites, and lemon juice until smooth and glossy
If desired, separate the icing into smaller bowls and add food coloring to each for different colors
Transfer the icing to piping bags or squeeze bottles for decorating
Once the cookies are completely cool, decorate with the royal icing and add edible decorations if desired
Allow the icing to set before serving or storing the cookies
